Chicken Parmesan

Jerk Chicken

What you need​

I dont know measurements, i just put stuff until my heart is happy with it :)

  • Chicken (thigh or breast work)
  • Breadcrumbs (I like panko)
  • Granulated Garlic
  • Chili flake
  • Paprika
  • Onion Powder
  • Oregano
  • Parmesan cheese
  • Mozzarella cheese
  • Mutti tomatos (best canned tomato imo)
  • Egg
  • Flour

What to do​

PREP:​

  1. If using breasts, i like to butterfly them open and then pound it down so the chicken is the same thickness all around, and it gets little bigger so it cook fast. if they turn too big you can always cut it in half. If using thighs, no need to butterfly them. Just pound them out to the same thickness.

  2. Season the chicken with a garlic, onion powder, chili flake, oregano, onion powder, salt, and pepper. seasoning changes everytime for me depending what i got at the time. Just season the chicken how you like.

  3. Prepare the breading stuff now. Season your flour and breadcrumbs (if using panko) with the same seasonings you used for the chicken minus the salt. Crack the egg into a bowl and put some water in it so you can stretch how much egg.

  4. For breading you can either bread all the chicken before hand then start cooking it, OR you can just bread and isntantly cook it. i do both depending how much chicken i gotta make.

  5. Open the canned tomato, depending which one you got. If you got the crushed tomato can, just season it simply salt, pepper, and oregano. If whole peeled, just mash the tomato and then season it up. You can cook the sauce, to get it thicker and give it some more flavor. I cook it or not depending how lazy i am

  6. If using Fresh mozzarella, cut it into rounds about 1cm thick (or however thick you want). If not using fresh mozz, you can either shred it up OR jut slice it into pieces both will work.

Cooking​

Preheat the oven to 375 F

  1. Start breading the chicken, use one hand for dry (flour and breadcrumb), and one hand for wet(egg mixture).

    • First drop the chicken in the flour, and shake off as much flour as possible when you take it out. Dont want any excess, just enough so that the egg will stick.
    • Second drop the chicken in the egg wash, dunk on side, flip and dunk the other.
    • Third drop the chickenin the breadcrumbs. i usually grab a handful of breadcrumbs, drop the chicken in the bowl, and then put the handful on top and really press it in. If your lazy you can also just put the breadcrumbs into a dish and put the chicken inside and shake it up real good, this also works.

    As you finish breading the chicken put it in a tray if youre not cooking right away.

  2. Preheat a pan with a thin layer of oil, and start cooking the chicen. All were doing here is getting the breadcrumbs to a nice golden brown color in the pan. Then we will finish cooking it in the oven.

    • Dont overcrowd the pan or the temp will drop too much and it will take too long to do.
    • After every set of chicken you put done cook, let the pan come back up to temp before starting the next batch.

    As the chicken finished cooking in the pan, put it on a tray or whatever you gonna use to bake it.

  3. Oven should be heated up now. Put the chicken in and let it finish cooking in the oven. Dont add any sauce or cheese as yet cause it will jsut burn and you will cry hard hard

  4. Once the chicken is cooked, take the tray out the oven, and bump the temp to 400 F.

  5. Now to top the chicken, I like to do layer of Parm, Sauce, Mozz, and more parm then a sprinkle of oregano and chili flake on the top.

    • When putting the sauce on the chicken, i like to put a fair amount but not too much, and spread it to just before the edges of the chicken.
    • Cheese, just try to cover the sauce you put as much as possible, leaving a bit showing on the edge.
    • Parm dont put TOO much cause its kinda salty, and you dont wanan oversalt the chicken cause then youll cry hard hard hard hard.
  6. Once all the chicken is topped with cheese and sauce, put it back into the oven to melt the cheese and let it take on some color.

    • if your oven has a broil feature, you can use the broil so the cheese will get a nice golden brown color.
  7. Take it out the oven and let the chap sit for a bit or you gona burn you mouth bad bad

Tip from me​

  • for sides just whatever you want, pasta, salad, make a sandwich whatever you want.
